Open Question: Video Converter that can utilize the full power of Core i7?

I am running Ubuntu 10.04 and Windows 7 (Dual Boot). I am perfectly happy with both platforms. I am converting a plethora of videos and it's getting annoying that it the conversion only uses one string when the Core i7 can process up to 8 strings.
